Hey everyone! Today's post is the recipe of one of my favorite cookies. They are edible raw because there's no egg but they are also great when baked. I know this post is a little late, but these cookies aren't just for Christmastime.
Ingredients:
1 cup butter
1 cup sugar
2 tbsp milk
1 tsp vanilla
2 1/2 cups flour
1 cup finely chopped red candied cherries
1 cup flaked coconuts
Beat the butter (or margarine), add sugar and beat till fluffy. Add the milk & vanilla, beat well. Stir in the flour and cherries. Optional: add 1/2 cup of finely chopped pecans. Shape this into 7 inch rolls. Roll the dough in the flaked coconut to coat the outside. Wrap the roll in waxed paper or plastic wrap. Chill thoroughly, then cut into 1/4 inch slices. Place these on an un-greased cookie sheet and bake at 375° F (180° C) for 12 minutes or until the edges are golden. This recipe makes about 80 cookies.
