Chick Pea Curry Recipe


Hey y'all! I found this recipe recently and I thought it would be great to share it with y'all. The credit goes towards Kara and Nate (click here to watch the video with the recipe.) I've mentioned their channel before in a YouTube Recommendations article.

I recommend trying out their channel and this recipe some time. Hope y'all enjoy this recipe! It was absolutely delicious! Here it is:


Ingredients:

6-8 garlic cloves

1 onion

1 fresh ginger - ~2 inches minced

Any vegetable of your choice

Olive oil

Turmeric powder

Curry powder

Red Pepper Flakes

Salt & pepper

2 cans of chickpeas

1 can of coconut milk

1 can of broth

Rice

1 bunch of greens

1 bunch of fresh cilantro

1 scoop of plain Greek yogurt


1. Chop garlic, onion, and ginger, and sauté them in olive oil with salt and pepper until sizzling. It takes around 10 minutes.

2. Add in any other vegetables you’d like here! Sweet potatoes, regular potatoes, zucchini, and bell pepper are all good options.

3. While those are cooking, drain and rinse chickpeas.

4. Add them in with the ginger garlic mixture

5. Stir everything up, and add in the turmeric, curry powder, more salt and pepper, and any other spice that you would like.

6. Let this sizzle for a few more minutes with with minimal stirring, browning chickpeas.

7. Once chickpeas are done, mash them up a little to help thicken the curry.

8. Next, pour in a can of coconut milk.

5. Then fill that same coconut milk can up with the broth and pour, then stir.

6. You can add some heat here and sprinkle in some pepper flakes.

7. Bring to a small boil and let it sizzle and thicken on medium heat until it’s to a nice thick consistency. This takes around 20 minutes.

8. While it’s thickening, make the rice.

9. Right before the curry is done, throw in some spinach, or whatever green you'd prefer. Stir and let them cook in the soup for the last couple minutes.

10. Once it’s ready, serve the curry over rice, and add some toppings:

1. A handful of chopped fresh cilantro

2. A shake of turmeric powder

3. Drizzle olive oil
